This easy and very healthy recipe of sandwich is made with rice and coconut rotti from Karnataka called Akki Roti. The stuffing is protein rich chutney with roasted gram and coconut. It's a healthy and glutein free combination. This is a staple of Karnataka which I have recreated as a sandwich !Do give it a try.

Ingredients and spices that need to be Take to make Akki Roti Sandwich:

  1. 1.5 cups Rice flour
  2. 2 tsp Cumin seeds
  3. 1 tsp Sesame seeds
  4. 1/4 tsp Asafetida or hing
  5. 1 cup Grated coconut
  6. 1 cup Chopped onions
  7. 2 Chopped green chillies
  8. 1 tsp grated ginger
  9. 1/4 cup Chopped coriander
  10. 1/2 cup Curd
  11. as per taste Salt
  12. as needed Boiling water
  13. For chutney:
  14. 1/2 cup roasted gram,
  15. 1/4 cup grated coconut
  16. 2 dry red chillies,
  17. 10-12 curry leaves,
  18. 1 tablespoon chopped coriander leaves
  19. 1 tsp grated ginger
  20. 2 tsp tamarind pulp
  21. as per taste Salt, chilli powder

Steps to make to make Akki Roti Sandwich

  1. First, gather all the ingredients in a deep dish or bowl. Add 1 tablespoon cooking oil.
  2. Add 1/2 cup boiling water and cover for 10 minutes. Then knead to a soft dough using more water if needed.
    Tip: be careful with hot water. Use a spoon if needed to mix a dough.
  3. Now grease a tawa with an onion peel dipped in oil. Take a big sized piece of dough and press it well all over the tawa.
  4. Make small indentations at center and around for oil to reach. Now keep on slow to medium flame and cook both sides till crisp.
  5. Avoid flipping too early. It may break the rotti. When it's crisp from both sides, remove on a plate. Your Akki Roti is ready. Make all in a similar way.
  6. Grind the chutney with mentioned ingredients till smooth using water.
  7. Cut 4 triangles from the rotti. Apply generous amount of chutney on the inner sides.
  8. Place one triangle over other. Grill on a hot tawa or you can use an electric or gas sandwich maker too.
  9. After sandwich is nice and golden, plate it with chutney and serve immediately and enjoy a delicious breakfast!
