Steps to make to make Kadhi-Khichdi #GujaratiFood101

  1. In the bowl of curd, whisk together the besan/gram flour, ginger, green chilly, salt and jaggery uniformly.
  2. Add the water and mix with a balloon whisk.
  3. Pour the mix in a pan in which you wish to make the kadhi.
  4. Keep the flame on low, whisk for a few min else the curd shall separate.
  5. Once it becomes uniform, stop whisking and let it come to a boil.

  8. In another pan make the tempering.
  9. Heat the ghee, add dry chilly and jeera.
  10. Pour it in the kadhi.
  11. Serve with Rice/Khichdi.
  12. For Khichdi-
  13. In a pressure cooker, add the ghee and cumin seeds. Let them splutter.
  14. Add the turmeric, salt and Red chili powder.
  15. Add the dal and rice and water.
  16. Let it come to a gentle boil. Cover with lid and let 2 whistles resound.
  17. Reduce the gas to medium. Close the gas after the 3rd and final whistle.
  18. Serve with generous ghee and kadhi.
