- 1 katori basmati rice
- 2 carrots

- 1 tbsp fried onion
- 2 tbsp curd
- 2 tomatoes

- 4-4 cloves
- 1 tbsp ginger Julian
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tsp coriander powder
- 1/4 tsp asafoetida
- 1/2 tsp cumin seeds
- 2-2 cardamom
- 1 tsp roasted cumin powder
- 1 tbsp lemon juice
- 2 tbsp butter
- to taste Salt
- 1 bay leaves
Instructions to make to make Veg Biryani
- Firstly soak rice in the water for 30 minutes. After 30 minutes add 3 katori water in the utensil and now add cardamom, cloves, Black pepper and bay leaves in it.
- When the water gets hot add rice,lemon juice,salt and ghee in it.when the rice gets 70 percent cooked then off the gas and strain the rice with the help of a strainer.
- Now cut the Vegetables in julienne shape. Heat the oil in a kadai and fry the peanuts in it. Keep the peanuts aside. Now add asafoetida, cumin seeds, clove, black pepper in it. When cumin seeds get brown now add all vegetables one by one in it. (Except spring onion and tomato) and mix it well. After 1 minutes now add all dry spices in it saute it for few minutes.
- When the vegetable gets half cooked then add tomatoes and spring onion in it and mix it well.after few minutes add curd and cumin seeds powder and mix it well. Turn off the gas when the vegetables get cooked.
- Take another utensil and put some butter in it. Now make first layer of cooked vegetables and put the rice on the layer and spread butter, fried onion, ginger Julian, coriander leaves and peanuts on the rice. Now again repeat the process.

- Now cover the utensil and cook it for 10 minutes on low flame.

- Turn Off the gas.
- Garnish with coriander leaves, peanuts and spring onion.

- Your veg Biryani is ready to serve.
