Biryani is one pot aromatic rice dish prepared with long grain Basmati rice flavoured with exotic spices- saffron and layered with veggies in thick gravy.
Aloo Kofta Biryani is a new version of Dum biryani. Instead of fried potato balls, here it is served with fried aloo( potato) koftas in thick gravy.
Ingredients and spices that need to be Prepare to make Aloo Kofta Biryani:
- 1 cup basmati rice
- 1/2 tsp lemon juice
- 1 tsp ghee
- to taste Salt
- 1 big pinch of saffron melted in 4 tbsp warm milk
- For Aloo koftas :
- 2 medium size boiled potatoes
- 1/4 tsp turmeric powder
- 1 tbsp green chillies-ginger paste
- 1/2 tsp red chilli powder
- 1 tbsp lemon juice
- Few coriander leaves finely chopped
- 2 tbsp besan
- to taste Salt
- Some Oil for deep frying
- For Gravy :
- 1/4 cup ghee
- 3-4 cloves
- 3-4 cardamoms(seeds)
- 3-4 cinnamon stick
- 2 red dry chillies
- 1 medium onion chopped
- 2 big ripe red tomatoes finely chopped
- 1/4 cup boiled green peas
- 1/4 tsp garam masala
- to taste Salt
- 1/4 curd
- 1/4 cup grated fresh coconut
- 1/4 cup finely chopped fresh coriander leaves
- 2 tbsp fried cashewnuts
Instructions to make to make Aloo Kofta Biryani
- Wash basmati rice and soak for 1/2 hour. Add ghee, salt, lemon juice to soaked basmati rice. Pressure cook for 2 whistles. Within 5 minute open the cooker lid and spread cook rice on big plate.(So cooked long grain of basmati doesn't stick together). Pour melted saffron milk on it.mix and keep aside.

- Preparation of Aloo Koftas.In mixing bowl add peeled boiled potatoes, mashed them. Add & mix turmeric powder, green chillies ginger paste,red chilli powder, lemon juice, coriander leaves,salt and besan.

- Mix and make 8 small balls from prepared mixture. Deep fry in hot oil till golden brown. Keep aside.


- In nonstick kadhai add and heat ghee, add & saute chopped onion till they turn brownish.


- Now add cloves, cardamoms seeds, cinnamon sticks,dry red chillies, green chillies-ginger paste and saute for 2 mins.

- Add & mix finely chopped tomatoes, boiled green peas, garam masala,salt. Cover and cook till tomatoes pieces are soft.



- Add & mix curd, grated coconut and chopped coriander leaves. Add and mix fried aloo koftas and fried cashewnuts pieces. Off the flame.


- In square baking tray,apply ghee inner sides. Divide cooked basmati rice into two equal portions. Spread one portion of rice on one side,other rice portion on other side..in between spread prepared aloo kofta gravy.(As shown in fig).

- Cover this prepared baking tray with aluminium foil. Bake in oven at 200 C for 20-25 mins till warm. Serve/ Relish Hot Aromat Aloo Kofta Biryani with Curd or Raita.
