- 500 grams mutton
- 500 grams preminum class basmati rice
- For boiling basmati rice:
- 2 green cardemoms
- 1 inch cinnamon
- 1/4 cup chopped coriander-mintleaves
- 2 bay leaves
- 1.5 tbsp salt
- 6 cups water for boiling
- For mutton:
- 3 onions (cut into fine slices)
- 1 tbsp ginger garlic paste
- 1/2 tsp turmetic powder
- 1 tsp red chilli powder
- 1 tsp kashmiri cjilli powder
- 2 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/2 cup curd
- 100 ml oil
- Whole spices:
- 2 green cardemoms
- 2 bay leaves
- 1 black cardemom
- 4 cloves
- 1 inch cinnamon stick
- 1/2 mace
- 1/2 tsp black cumin
- as per taste Salt
- as required For garnishing :green chillies,mint-coriander leaves
- 1/2 cup milk with a pinch of orange food colour
- 1 tsp kewra water
Steps to make to make Mutton Biryani
- Wash and soak badmati rice for 30 minutes.
- Boil rice 80% with mentioned ingredients.Drain and keep aside.
- Heat oil in a pan/kadahi.Add whole spices.Add onion and fry till golden brown.
- Add mutton.Saute for 2-3minutes.Add powdered spices,mix well.Saute 1 minute.Add curd.Cook for 2-3minutes.
- Add 2 cups water,let it boil.Add salt.Cover and cook for 40 -45 minutes till mutton is soft.
- Assembling of biryani:Take out mutton from pan.Add half of rice in the same kadahi.Add half of mutton.Put a layer of chopped coriander -mint and some fried onion.
- Put another layer of rice.Repeat the process.Pour food colour and kewra water over.
- Seal the vessel with alluminium foil,cover with lid and put on lowest flame for 10-15minutes.
- After 15 minutes,serve the biryani with raita.Enjoy.
