Ingredients and spices that need to be Make ready to make Muthiya, kadhi:
- 1 cup Boiled rice
- 1/2 cup grated bottle gourd
- 1 tsp Red chilli powder
- 1/2 tsp Garam masala
- 1 tsp Sugar
- 1/2 tsp Turmeric powder
- 1 tsp Salt
- 1 cup Wheat flour
- 1/4 cup Besan
- 3 tsp Oil
- 1/2 tsp Carrom seeds
- Pinch Asafotedia
- Foor kadhi:
- 1 cup Curd
- 3 tsp Besan
- 1/2 tsp Turmeric powder
- As per taste Salt
- For tadka (kadhi):
- 2 tsp Oil/ghee
- Pinch Asafotedia
- 2 green chillies
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 6-7 Curry leaves
- 2 Green chillies
- 2 tsp Chopped Coriander leaves
Instructions to make to make Muthiya, kadhi
- Combine bottle gourd, carom seeds salt, besan, wheat flour, red chilli powder,soda, garam masala, turmeric powder and boiled rice. Then mix gently and make a soft dough. Do not add water. If it's dry then add more boiled rice.


- Now heat dhokla steamer. Take a small portion of dough and make a long roll. Make all rolls like this. Put in steamer. When you make a roll apply little oil on your palm then steam for 20 to 25 minutes.


- When muthiya is cooked let it cool down and cut all the rolls. Then take a pan heat oil when oil heated then add mustard seeds, cumin seeds, white til, green chilli, curry leaves, turmeric powder, red chilli powder and steamed muthiya.



- First make buttermilk from curd. Now we eat buttermilk little and then add besan, turmeric powder, salt add required water with a wire whisk or wooden churner mix everything well. Now begin to cook the curry keep stirring in between and let the curry come to a boil continue to cook even after the 30 minturs and let it come to a boil.



- When the curry wheel little thicken by the time it is cooked cover and keep aside now heat ghee or oil in tadka pan add mustard seeds, cumin seeds asafotedia, red chilli powder, dry red chilli powder. Mix in kurti at last and chopped coriander and serve with muthia.
